"Kettle Corn" That Won't Ruin Your Diet

Popcorn prepared correctly has a lot of great health benefits. It is high in fiber, polyphenals which possess numerous health benefits, including the prevention of degenerative diseases such osteoporosis, cardiovascular disease, cancer, neurodegenerative diseases and diabetes. The other ingredients in this recipe all have great health benefits. This is a snack you can eat and not feel guilty. In fact in moderation it is very good for you. I say moderation only because of the carbohydrate content. However I have eaten 4 plus cups at a time with no impact on my weight. Here are a few other cool health benefits of this popcorn.

You will need:

An air popper: They are inexpensive (mine came from bed, bath and beyond and was around $20) you can buy on amazon http://www.amazon.com/s/ref=nb_sb_noss_1?url=search-alias%3Daps&field-keywords=air%20popper&sprefix=air+poop%2Caps&rh=i%3Aaps%2Ck%3Aair%20popper
1/2 C. Popcorn Kernals. Organic preffered.
3 T. Coconut oil
1 T. Honey
1 t. vanilla
1 t. cinnamon
Salt to taste with real sea salt.


Directons:

In a small  sauce pan on med heat melt coconut oil. Add honey, vanilla and cinnamon and stir until well combined. Pepare popcorn in air popper according to directions. 1/2 C. Kernals makes a huge bowl of prepared pop corn. In a large bowl with a rubber scraper pour coconut oil mixture into popcorn and mix adding salt to taste. That's it! It tastes great and is an awesome replacement for when you are craving a salty fried snack!

Healthy Strawberry Banana Smoothie/ice cream

Breakfast is hard for a lot of people. We are all rushing out the door to go somewhere we don't want to go, to do something we don't want to do and be with people we don't like, for money. A good breakfast though could improve that sour attitude. This is easy, fast, really good and loaded with vitamins, minerals, protein, probiotics, prebiotics and rainbows. The more ice you add the more it is like soft serve I cream, my kids love it and think they are getting a speical treat, suckers. Here are your ingredients (2 small children optional)



1 C. Almond Milk
1 C. frozen strawberries
1/2 Banana
1 Vanilla Build protein powder/meal replacement (loaded with pre and probiotics.
A high speed blender

Directions: place everything in blender Blend on high until combined and Ice is crushed. That's it. Enjoy

Never Eat A Restaurant Steak Again



Ever gotten hungry during a stake out? What if stakes were so high you just had to win? Made a mistake and want to eat your sadness away? Hate puns? Continue reading, I could only think of three. I love a good steak on the barbie, but during winter not only do I not want risk icicle impalement while grilling, but my grill typically can't get hot enough to cook a steak the way I prefer. I have researched, tried and tested and now the science is sound enough to share with you how to prepare a perfect steak when the grill is not an option.

You will need:

1. Large cast iron or other oven safe skillet.
2. Steak (the pictures below are free range, grass fed, hormone free Ribeye. You can use whatever cut you want.) The Ribeye I'm using are about 1 1/4" thick you will need to adjust cooking time based on thickness.
3. 2 T. Olive oil
4. Butter (optional)
5. Seasoning (dealers choice)

I am going to show you how to cook a steak to medium rare. If you want it less done, just adjust your time, if you want it more done grab out some chicken and find a recipe for it.




Prep: Get the steak out ahead of time and bring it to room temperature, do not skip this step, if the meat is too cold the outside will burn while the inside remains cold. Pre heat oven to 350. Sprinkle or rub with your choice of spices *DO NOT SALT. Salt draws out moisture and if you salt meat before you cook it your steak will lose it's juicy deliciousness. set stove on medium high. Place frying pan on stove with 2 tbsp. Olive oil,  (I use the 8 out of 10 setting on my stove.) Once the pan is very hot, which does not take long with cast iron, move steaks to pan and sear each side for 4 minutes. Turn your fan on if you have one, it will make a decent amount of smoke.  After 4 min. cover your steak in butter if you want, then move to preheated oven, cook for 6 minutes. Tent under foil and let stand for about 10 minutes. At this point go ahead and salt the steak and it is ready to enjoy! Super good and jam packed with protein! Never eat a restaurant steak again. Served it up with steamed sweet potatoes and steamed broccoli.

Easy Granola Bar Replacement

This recipe came a across my news feed on facebook so I tried it and am now an addict. Energy balls are a great replacement for granola bars, an awesome pre or post workout snack, and a quick healthy choice to grab and go when you are in a hurry, great for camping and hiking. They are 100% raw if you don't use chocolate chips. The recipe is so simple my 4 year old could make them. The ingredients are simple and inexpensive. If you are on a very high protein low carb diet, these will help give you the healthy carbs you need while regulating your digestive system and cleaning out your colon.

1 C. Oats: oats contain a unique nutrient called beta glucan. It’s a type of fiber that increases levels of an appetite-controlling hormone called PYY

1/2 C. Peanut butter: Though technically a legume, peanuts have fiber, and  protein. When it comes to antioxidant content, peanuts are the winner *only use crushed peanuts peanut butter. Skippy, jif and all those other brands are loaded with garbage preservatives and hydrogenated oils.


1/2 C. Flaxseed Powder: Some call it one of the most powerful plant foods on the planet. There’s some evidence it may help reduce your risk of heart diseasecancerstroke, and diabetes. That’s quite a tall order for a tiny seed that’s been around for centuries. It is a great source of Omega3 (webmd)


1/2 C. chocolate chips (optional) Though a good 70% cacao chocolate is loaded with antioxidants.


1/3 C. Honey: We use local honey harvested as close to our home as possible to reduce allergies. Honey also possesses antiseptic and antibacterial properties


Directions: mix everything together until well combined. I use my hands at a certain point and knead it like a dough to get it all mixed in. Shape into balls. That's it! Refrigerate and enjoy. Your kids and you will love them. It is a super healthy snack as opposed to that sugar laden Quaker bar!

Start Your Engine

Pee Wee Herman taught me: "Breakfast is the most important meal of the day!" Followed by his trade mark hahaha! I often wonder what he had the morning before he made his way into a special theater and ruined his career. Despite his faults as a human being, he was right when it came to breakfast. When you eat soon after waking up you get your body running, your metabolism kicks up and your body starts going. If you proceed to your daily activity without any nutrition it is like jumping in your car to go work on an empty tank of fuel. Along with having energy and feeling good, your body will start burning fat and converting it to energy. Here is one of my favorite breakfasts. It is quick, easy and packed with vitamins, minerals, fiber and antioxidants. Keep in mind I have a protein shake on my nightstand as well that I drink with vitamins as soon as I wake up.

Blue Berry Oatmeal:

Ingredients:



2 C. Water or 1 C. water, 1 C. milk ( I use raw or almond)
1/4 t. sea salt
1 C. Steel cut oats
1 C. Blueberries
1 T Greek Yogurt
1 T Honey
1 T organic grade A or B maple Syrup

Prepare oatmeal as directed on package. After waiting for 2 minutes, mix in blueberries, honey maple syrup and greek yogurt. My kids eat this stuff like crazy and I know it is good for them. It is a great alternative to cold cereal (fried corn and sugar coating.)

There Is Nothing Wrong With Wheat

Reinventing the wheel is a waste, what I am going to share here is already researched and proven, so I will share the links. There is nothing wrong with wheat, all the intolerance's are caused by the fast rise yeast. My family and a few friends with high "gluten intolerance" are now enjoying breads, pastas, muffins etc with none of the discomfort associated with store bought or quick rise/baking powder wheat products. Weekend

The weeknd was good. I stayed strict on my diet and workout regiment. However, I gained .2 lbs sunday morning and was back to 189 this morning so pretty average no loss no gain. I did however learn some amazing information about wheat which I will share later today, if you have a "gluten intolerance" or are on the paleo diet you will want to read what is forthcoming.

How Fat Was I?

I just came across these pictures:

I cannot believe I was that fat and out of shape. These photos reignite my resolve to take care of myself, eat right exercise and do everything I can to look good, be healthy and not become a burden to my family in the future due to to heart disease, diabetes or any of the other hundreds of weight related diseases that run rampant in our county.  Some of these photos were taken in Nov. 2 years ago, the bottom photo was taken in the summer to 2010. I spent most of my life being fat and had accepted it. Changes I have made in diet and exercise have affected my whole life. I have more confidence, I feel much better and have enjoyed greater success since making these changes in Feb of 2013. The 30 day challenge I am taking is not just to lose weight, but to help me remember I control my destiny.

When this pics were taken I weighed about 220 lbs, wore a size 38 pant and xL in most other clothing. I now weigh 189 lbs wear a size 34 pant and most clothes are med to Large. I am telling you my story in hopes to inspire you, I want you to know that if I can do this so can anyone else. I am no one special. Once you make the decision you can achieve whatever you want. Here are yesterdays results.

Workout: Boxing on a heavy bag 1 hr.

Breakfast: Build meal replacement, elevated drink and transform supplement.

Snack: 2 string cheese, 2 clementine

Lunch: Butternut squash soup, wheat bread w/butter Transform Supplement

Afternoon snack: Greek Yogurt 1/2 C. strawberries 1/2 C. raspberries, Elevated drink dove dark chocolate bar 4 chocolate chip cookies, 1 sugar cookie.

Dinner: Chef salad w/ ranch, transform supplement

Weigh in: Down another .6 lbs, Total loss so far is 3.2 lbs without perfect diet.

Butternut Squash Soup

You may think I am crazy for starting a serious fat cut program right before the holidays, or maybe I am a genius! (I am) Working hard for results encourages me to stay convicted when amazing treats and snacks appear constantly on my doorstep. I seek out delicious, healthy fall recipes and this one is a winner! Butternut squash is incredibly nutritious, low in fat,  loaded with potassium for bone health, vitamin b6 for nervous and immune system health, and folate to guard against brain and spinal cord related birth defects (my wife is pregnant). Carotenoids which help protect against heart disease, deter breast cancer, and support healthy lung development in infants and fetuses. One cup of butternut squash has half a days recommended intake of Vitamin C. So how do you eat the stuff? Here is an easy, awesome recipe.

6 T. Chopped Onion
4 T. Butter
1 Butternut Squash
4 C. Chicken/Vegetable Stock (dealers choice)
1/2 t. Marjoram
1/4 t. Fresh Black Pepper
1/8 t. Cayenne
2 8 oz package cream cheese (softened)

Cut the butternut squash in half and remove seeds and guts place face down on cookie sheet and bake at 350 for 1 hr. or until soft. Heat up butter in your soup pot and saute the onion until translucent. Add Stock, marjoram, squash, marjoram, pepper, and cayenne. Bring to boil then cook on med high for 20 min.
Move to blender with cream cheese and blend on high until smooth. Return to pot and warm (do not boil).  Enjoy!





I'm not sure if the kids liked it or not.


Fastest Blood Giver In Town

Yesterday marked the third day in this 15 lb weight loss adventure. As a service I give blood as often as possible. I filled a pint in 4 min 20 sec, the lady told me it was the fastest time of the day. BAM! Also blood pressure is 122/88 and heart rate 53 bpm which is that of an athlete, I am feeling better than a bald red neck in a mullet wig shop! Here is how yesterday panned out.

Workout: NONE recovery day (recovery is extremely important, Never skip this day)

Diet

Breakfast: Build meal replacement, Elevated drink, Transform supplement

Morning Snack: Apple with 2 T peanut butter

Lunch: Chef salad w/ranch Crisp Juan burrito (taco time, I never said I was perfect) transform supplement

Afternoon snack: String cheese 2 clementines, Elevated drink.

Dinner: Butternut squash soup (recipe in next post), bread w/butter, transform supplement

Results: A picture says a thousand words, that makes .8 lbs loss since yesterday 2.6 lbs burned in 3 days

Day 2 (I'm not clever enough for a cool post name today)

One thing is certain, I do have abs, because I can feel them with every movement I make this morning, either that or an alien type creature will be bursting forth from my gut later today. Sneezing feels like the powers of gray skull are uniting against me and thusting into my insides like a Ryu style fire ball.  Energy levels have stayed consistant throughout the day and hunger was curbed. I still have no desire for energy drinks. At night around 9:30 hunger ensued, however my resolve overcame my weakness. One who truely wants to overcome their body and transform it, knows breaking bad habits is paramount. I had been eating late at night in bed, usually junk, so my whiny little sissy body is begging for the jump. In a short time my body will adjust. My mind feels sharper, my body feels strong  and I am happy.

And The Results


  • Workout:
Abs: 50 minutes 8 excersizes 3 one minute sets. I wanted to cease existing by the end

  • Diet
Breakfast: Build meal replacement drink and a transform supplement. Elevated drink 2 chocolate cookies (I got weak)

Morning snack: Gala apple with adams all natural peanut butter (2 tbsp)

Lunch: Nally chili, 1 tbsp greek yogurt and 1 serving don julio tortilla chips (I was in a hurry don't judge me) tansform supplement

Afternoon snack: 2 cheese heads string cheese elevated drink

Dinner: Chicken breast and farm rice 

Eating small meals every 2-3 hours keeps your metabolism up and helps you lose weight, skipping meals will cause your body to retain fat.


  • Result: I am down another 1.4 lbs! that makes 1.8 lbs in only 2 days. I am  stoked, only 13.2 lbs to go!

Day 1 Dropping The Last 15

Yesterday marks the begining of a 30 day fat burning program. I felt awesome throughout the day, had plenty of energy, played with the kids, ran errands and accomplished all the tasks that make my day off such a pleasure! "Day off" should is a loose term with two kids under three and a wife seven months pregnant. Food cravings were really minimal, during feedings I had to force myself to finish my meal. The need to food to rebuild after a heavy workout is paramount for maximum results. The desire for soda and energy drinks is completely gone (I used to drink 1-2 e-drinks a day)

The day in a snap shot, and the results:
  • Work Out 
Biceps and Triceps, just over a 1 hour workout

  • Diet
Breakfast: Build high protein meal replacment, 1 C. Oatmeal w/ 1tbsp honey 1tbsp organic maple syrup and 1 C. blueberries. Elevate peach mango drink. 1 Transform supplement.

Lunch: 2 brawurst boiled in apple juice, pan fried in coconut oil with mustard 1 transform supplement

Snack: 2 pieces of a kit kat, one gala apple 2 tbsp peanut butter, a second elevated juice drink.

Dinner: Chicken breast pan fried in olive oil, coated in parmesan/greek yogurt served with rice a roni, Two slices natually leavened whole wheat bread with honey butter 1 transform supplement.

And now the moment may actually care about drum roll Clark Griswold style


  • Weigh in
191.8 a loss of .4 lbs. Considering my diet and excersize did not really change I am happy with the results. I just added the Transform, elevate and build on a consistant schedule. 15 lbs just hiding away abs, that according to anatomy I have never seen them, I am going on faith. I hope for this thing which has never been seen but is real. 14.6 lbs to go or a washboard, whichever comes first really.

Losing The Last 15 LBS.

I have been stuck at my current weight for sometime now, it is super frustrating. I dropped 30 lbs in 7 months and then leveled out. It is not so much the weight loss I am worried about, I have a fairly muscular physique so I know I will weigh more than a skinny person. It's this fat around my love handles and stomach that does not allow my abs to show. It's super vain, but I have always wanted a stomach that my wife could scrub our laundry on or play in a hillbillly band with a jug blower and a nose harpist. I have had the goal to earn a six pack for years and have been working hard. Upon researching, I found I am fighting millions of years of human adaptation. Our bodies have been built to hold onto around 10-15 lbs of fat in case our food sources became scarce. (In the distant past McDonalds and grocery stores were closed in the winter, making food slightly harder to come by.) My highly evolved body refuses to listen to my brain and let go of this extra weight. Recently I discovered a really cool company that has a 30 day weight loss plan. All the ingredients are all natural with nothing added, nothing artificial. I started the 30 day program today and will track all results here. I promise, good, bad or indifferent I will let you decide the efficacy of the program. I am stoked to try it out. I already eat healthy, workout 4 to 5 times per week and am fairly active. Hopefully this will be the catalyst that destroys this last bit of fat, like Luke Skywalker shooting into a hole about the size of a wamp rat to destroy the death star.

Perception is Everything.

The best lesson in perspective I have ever received was from my 3 year old daughter. As frequent Costco shoppers, if we don't get ice cream, the highlight of the trip for my daughter is getting our receipt checked. Usually a pleasant face woman at the door draws her a smiley face and she lights up with excitement. On a particular day she handed the lady our receipt, who marked a quick line and on we went. I wondered in my mind what she would say and prepared for her disappointment. Her eyes lit up, a huge smiled penetrated her lips and she exclaimed, "Look dad a Snake!" Perception is what creates the world we choose to live in.

Why Me?

When your kids have you at your wits end think of  mourning parents of a deceased child or a woman longing to be a mother but never will. When you think your house is too small or poorly decorated think about the families living in shacks, projects or outdoors. When you feel too fat, skinny, ugly, have bad hair or not enough make up think about those who wonder where their next meal will come from. When you stare in a closet and have nothing to wear think about those who are happy to have one set of clothes to protect them from the elements. When you hate your job feel for the father who is searching to find work and can't seem to hold anything down. When you wonder why me, think about it this way. Why do I get to live in such a free country, why do I have every opportunity I could possibly ask for looking me in the face and pass it up, why am I wealthier than 99% of the world's population. Why won't I die of starvation this week, month or year. Why do guerilla soldiers not storm my house violate my women and turn my children into slaves and hate mongers. You are reading this, it means you have it pretty damn good, so stop complaining about all the things you wish you were or had and start r being grateful for the life you have been given. Then use it to improve the lives of others.

The Problem With Low Calorie Diets

Simple math right: calories taken in-calories burned=guaranteed weight loss right? Well, until you get that pesky thing involved called the human body involved, it has all kinds of crazy survival skills programmed into it to help you well, not die. When you take in too few calories your body begins to hold onto fat in fear it will need to use it later for energy. Think of it like this, you have only a quarter tank of fuel in your car, will you drive all over town and just hope you don't run out, will you stop and gas up before driving all over, or will you stay at home because you can't afford to replace the fuel. Your body is you in this scenario and it can't create fuel on it's own, it needs new fuel added before it can get back to moving at a high velocity (metabolizing). You need to find your RDI meaning how many calories you should be taking in to maintain your weight. You can do that here: fatsecret.com.  If you want to shred fat, eat 500 calories below your RDI.  Your system will keep burning fat and excess stored energy without the fear of running out. It will maximize your weight loss. Starving yourself will only break down muscle and hold onto fat in fear you are not going to refill the gas tank. After you starve you will likely purge and then feel bad about yourself and have self esteem issues and next thing you know your riding a train though Tijuana feeding your Chiclets addiction! Seriously though lose weight, be healthy and be happy. After all the way you look is only a side effect of how healthy you are!

How Long Should My Work out Be?


Check out the quote. That's from a Dude that jacked like 50 asians with a pair of bike pedals hooked to his shoes in a fiery building filled with oil. Obviously a skilled man such as he can speak but truths. What he looks like validates what he says! The gym is jam packed with people on treadmills and bikes for 2-3 hours at a time, heck you can catch a full film in the old cardio cinema if you are so inclined. Usually when I sit and speak with these folks they are dissapointed with the results achieved for all the time they have put in. I do not run. I run when I play basketball or other sports but other than that I don't run. Read the quote and do it. Plan your workout push as hard as you can and study so you understand why and how to do what you are doing. RESULTS WILL FOLLOW! 5 days a week is plenty. Don't say you don't have time, if you don't want to make time I understand but you do have time! It only takes 30-40 minutes per day. That is 3.33 hours a week, so instead of finding out how big Kim Kardashians butt is getting, which human spectacle is losing the most lbs, or making yourself feel better because your not as trashy as honey boo boo,  put down the milk duds and the coke and get your butt in gear. The pain of discipline will be short, the pain of regret lasts a long, long time.

Fitness on The Cheap

I love going to garage sales. You get an inside look in a snapshot of an entire family  life. Motivational books, never cracked open, books on finance and laws of success unread, old cooking equipment rarely used and clothes that no longer fit. It is fascinating to see how people tried to live. On a whim they often buy a product to improve their lives, as the exitement wears off the item sits and gathers dust. (I also find a thrill in negotiating a 10 cent item to 8 cents!) Success! One item, however is strewn throughout yard sales weekend after weekend, month after month and year after year without fail: Exercise videos and equipment. Rarely are they even used, often never opened. So I got to wondering, "Why?" My answer came as I contemplated my own life. I have started and failed hundreds of times, this blog may make that list :) but I hope not. I have started and quit more exercise and fitness programs than I can count. My routines have lasted anywhere from days to weeks, but I did not really stick to anythign. This time I have. How I have however is the interesting part: I spent almost no money. I did not buy a home gym, I did not get a Golds pass in fact I hate the phone harassment so much from Golds I did not even look into it!

The reason a gym pass did not work for me, and I think does not work for most people is you have no idea what you are doing. You show up like a contractor with no experience would to a job site, you see lumber, nails tools and a foundation and know it can make a beautiful home but you have not idea how it goes together. You pick up a hammer and nails and boards and just start trying. Soon the house you built is unfit for a litter of illegitimate kittens so you give up and move on. Without a trainer or a plan YOU WILL NEVER SUCCEED. Hours on the treadmill will leave you tired, frustrated and annoyed. However golds gym or wherever you go will keep on deducting that 18 bucks a month from your account, rumor is you don't pay based on your results. When you buy equipment sometimes you use it once or twice but when results are not instantaneous often we give up, eventually the new years resolution wears off.

Here is what I did, largely because I am cheap, partly because I was not committed like I am now.

1. I bought UFC personal trainer on amazon for 15 bucks. I already had the xbox. You don't need to buy a game, you can buy workout dvds all over craigslist, KSL if you live in Utah, amazon,  or nearly anywhere for under $20.  UFC personal trainer has 3, 30 day programs at different intensity levels and 3, 60 day programs. It works because it's automatic, I wake up, pound a Gnarly blend pre work out, walk downstairs and do whatever the game tells me. I did not buy workout clothes, I did not buy weights, I did not buy anything. I just threw on some ratty shorts and got ready to vomit several times. I also talked back to a digital trainer when he tried to push me too hard. He didn't even care or respond! So start Small!

2. Reward your hard work with new equipment. As I got going and was consistent for a month my shins started hurting. Working out barefoot was the culprit, so I sprung for some shoes. I did not go to Foot Locker or some other fancy work out store, I'm not trying to win a triathlon, I just wanted decrease the pain in my shins. As I was more consistent I needed to bump up my workout so I bought some resistance bands http://www.amazon.com/Black-Mountain-Products-Resistance-Exercise/dp/7245456313/ref=sr_1_1?ie=UTF8&qid=1377107763&sr=8-1&keywords=resistance+bands these ones to be exact. 30 bucks. When I got sick of our crappy basement carpent scratching my back like a cat on a post, I went to Ross and sprung for 15 bucks on a workout mat. I also bought shorts and work out shirts as I slimmed out of the ones I had. But I did not go to a major sporting goods store, I went to Ross and cruised the clearance rack.

I have probably dropped about $200 total since Feb. And will not need anything for a long time. Most of the money was on workout clothes and shoes, so if I stop working out (NO PLAN TO) I will still have clothes to wear.
